Ingredients
Vegetable oil
2 large eggs, beaten
5 spring onions (1 cup), chopped, white and green parts separated
1 tablespoon minced garlic
500g frozen cauliflower rice
1 cup frozen peas and carrots mix
4-5 tablespoons soy sauce
1 teaspoon sugar
1 teaspoon rice vinegar
1 teaspoon sesame oil
1/4 cup cashews or peanuts (optional)
Directions
Heat 2 teaspoons of vegetable oil in a large frypan, add eggs and scramble until cooked. Transfer to a small plate.
Heat 2 teaspoons of vegetable oil and sauté the white parts of the spring onions with garlic for 1 min.
Add frozen cauliflower rice, peas and carrots and cook for 6 mins (or until cooked through).
Add the soy sauce, sugar, rice vinegar, sesame oil, and stir for 1 min.
Then stir in the green parts of the spring onions, nuts, and eggs.
Adjust to taste and enjoy!
