Ingredients
2 cups VPA Australia WPI Natural
1 tsp salt
1 tsp baking powder
1 cup heavy whipping cream
2 egg whites
1 tsp baking powder
2 tsp white vinegar
1lb Chicken breast (you may use breast, thigh, drumsticks etc.)
1 tsp dried thyme
1/2 tsp dried oregano
1/2 tbsp black pepper
1 tsp salt
1 tsp garlic powder
1/2 tbsp ground mustard powder
1/2 tsp celery seed
1/2 tbsp ground ginger
2 tbsp smoked paprika
Keto breading
Buttermilk wash
Chicken & Spice Mix
Directions
Place chicken on a baking sheet, season with salt and set aside at room temp for 30 minutes or refrigerate.
Mix the spice mix together in a small bowl and whisk until evenly combined. Set aside.
After 30 mins, pat the chicken dry on both sides with a paper towel. Coat the chicken all over with about half the seasoning mix.
Combine all the buttermilk wash ingredients and set aside.
Heat oil over medium heat until oil is about 350 degrees.
Prep the keto breading by combining all ingredients with the remaining seasoning mix.
Dip chicken in the buttermilk wash to completely coat. Then place in breading mixture. Flip the chicken in the breading and press the breading in to create a thick layer to completely coat the chicken.
Fry the coated chicken pieces in the hot oil. Flip chicken occasionally to get all sides evenly cooked. Transfer fried chicken to a cooling rack. Repeat with remaining chicken.
Recipe Note
- Make sure to use unflavoured or Natural Whey Isolate and not the whey protein powder.
- If you eat dairy free, simply switch the whey protein isolate for our VPA egg protein powder.
Egg whites instead of whole eggs
- The fat in the yolk of a whole egg can add moisture to the wash, making the coating not as crispy. Skip the yolks and just use the whites.
