Regular chocolate pancakes are great but have you tried protein packed choc coconut pancakes? The flavours are awesome together! Top it off with some blueberries and your day is all set. Created with VPA® Creamy Choc Coconut protein powder. Yum!

Ingredients
30g Uncle Tobys Quick Oats
80g Banana, Mashed
55g PureEgg Egg Whites

20g VPA® Creamy Choc Coconut Protein Powder
1/2 Teaspoon Baking Soda
10g Lindt 70% Cocoa Chocolate
20g Blueberries
20g Banana, Sliced
2g Coconut Flakes
Directions
In a food processor or blender, blitz your oats until they become a fine powder. It should be a flour-like consistency.
In a bowl, combine oats, mashed banana, egg whites, protein powder and baking soda. Mix until a batter has formed.
Heat your pan over a low to medium heat. Once hot, add 1/4 of your mixture to the pan. Cook until bubbles form on the surface, and then flip. Cook the second side until golden brown. Repeat with remaining batter.
Melt your chocolate. Stack pancakes and pour over melted chocolate. Top with blueberries, sliced banana and coconut flakes. Serve and enjoy!
