One of the many things we like to prep for the new week are these delicious blueberry protein muffins. They are scrumptious, packed with nutrients and are made with VPA® vanilla whey protein isolate.

Ingredients
300g Banana
3 x Whole Eggs
10ml Vanilla Extract
50g Honey
140g Chobani 0.5% Fat Greek Yoghurt
140g Wholemeal Plain Flour
100g Self Raising Flour
1 tsp Baking Powder
1 tsp Baking Soda

100g VPA® Vanilla Whey
200g Blueberries (Fresh or Frozen)
Directions
Preheat your oven to 160 degrees and line a muffin tin.
Mash banana in a bowl. Mix in eggs, vanilla extract, honey and yoghurt.
In a separate bowl, mix together the wholemeal flour, self raising flour, baking powder, baking soda and protein powder.
Add dry ingredients to wet ingredients and mix until combined. Gently mix in 3/4 of your blueberries.
Weigh total mixture and divide by 12, this will give you the total grams per muffin case. Distribute the mixture between all 12 cases and top with remaining blueberries.
Bake in the oven for 25 minutes or until golden and cooked through. Once cooked, remove and enjoy!
