These no-bake Gingerbread Protein Balls are the perfect snack this Christmas. They are vegan, gluten-free and full of spicy gingerbread flavour. Try them drizzled with white chocolate for a rich finish.

Ingredients
2/3 cup prunes or pitted dates soaked
1/4 cup cashew butter
2 tbsp water
1 tbsp maple syrup
1/2 tsp vanilla essence

50g VPA Salted Caramel Premium Plant Protein
1/2 tsp ground ginger
1/4 tsp ground cinnamon
1/4 tsp ground nutmeg
1/8 tsp sea salt
50g vegan white chocolate melted
Sprinkles to decorate

Directions
Add wet ingredients to blender and pulse until smooth, scraping down the sides as needed.
In a small bowl combine the dry ingredients then add the wet ingredients. Add more water if too dry or more protein powder if too wet.
Using a tablespoon, roll dough into balls and place in the fridge.
If using chocolate, remove balls from the fridge after 15 minutes and drizzle melted chocolate on top. Add sprinkles if you like.
Keep in an airtight container in the fridge for up to one week.
Recipe Note
Tips: Soak dates for 15mins in hot water to soften them.
