Level up your lamington game with this bite size coconut protein lamington recipe. I guarantee that you will taste bliss with every bite! It is a perfect snack or dessert to serve for Australia day or to be enjoyed all year round with friends and family. Made with VPA® WPI.

Ingredients
60g raw almonds
16g quick oats (blended until fine)
1/3 cup shredded coconut

30g protein powder
1 tbsp macadamia oil
2 tsp water
1 tsp vanilla essence
2 tbsp sugar free maple syrup
1 tbsp macadamia oil

1 tbsp chocolate protein powder or cacao
1 tbsp tahini
Directions
Blend all dry ingredients in a blender. Add wet ingredients and blend again until all ingredients are combined.
Pour mixture into a bowl. Using the heat of your hands gently mix and roll into 6 balls. Refrigerate for 10 minutes.
Chocolate dipping sauce: In a small bowl, whisk macadamia oil, cacao or protein powder and tahini.
Gently dip each ball into chocolate sauce and roll in coconut.
Refrigerate for 30-60 mins until chocolate has hardened.
