Classic rich chocolate flavoured red velvet cake turned into high protein cake popsicles. This easy to make red velvet protein cake popsicle recipe is the perfect luscious, guilt-free and high protein dessert you need to bake next. It is made with high quality whey protein (VPA® WPI in Vanilla) mixed in dark baking chocolate, yoghurt, and 60% less fat cream cheese. And as you can see, they're also so pretty too. It's the perfect protein dessert to treat yourself or for sharing! *wink

Ingredients

30g VPA® Vanilla Whey Isolate
30g White Wings Plain Flour
5g Natvia Natural Sweetener
5g McKenzie’s Baking Powder
1 x Whole Egg
70g Coles Apple Sauce
70g Chobani 0.5% Fat Greek Yoghurt
Queen’s Red Food Colouring
25g Philadelphia 60% Less Fat Cooking Cream Cheese
100g Cadbury 45% Dark Baking Chocolate
Directions
Preheat your oven to 180 degrees. In a bowl, mix together your protein powder, plain flour, sweetener and baking powder. In a separate bowl, combine greek yoghurt, applesauce and egg. Add your dry ingredients to your wet ingredients and mix well until combined. Add in food colouring and mix until the batter becomes a colour to your liking.
Divide mixture evenly into 6 holes of a cupcake baking tin. Bake for 10 minutes. Once cooked, remove from the tin and allow to slightly cool.
Once cooled, add cake to a bowl and break up using your hands. Once crumbled, add in cream cheese and mix with your hands until sticky.
Melt half of your dark chocolate and evenly distribute between 3 cake-popsicle moulds. Spread around over the sides. Refrigerate until set.
Insert popsicle sticks into moulds. Weigh total cake batter and divide by 3, this will give you the total cake per popsicle. Distribute cake batter between moulds, ensuring that it is secure around popsicle sticks.
Melt remaining chocolate and distribute evenly on the base of the cake. Refrigerate until set (2 hours). Once set, remover from popsiclemoulds and enjoy!
